Whenever possible, we try to source our ingredients locally so that you receive the benefit of high-quality, fresh food. We are especially proud of our Virginia oysters. Varying in flavor from the seven different regions from which they’re harvested, these oysters are contributing to Virginia’s emergence as the oyster capital of the American east coast. Throughout the year, we try to feature these shellfish and share our “Virginia pride” with locals and visitors. To ensure future growth of the local oyster populations, the shells are recycled through the Lynnhaven River Now initiative.
